Ingredients: 1 tbsp flour 1 tbsp fat 2 cups chopped onion 1 lb pork sausage 1 green pepper, chopped 1 garlic clove, minced 2 tbsp parsley 1 1/2 cups diced tomatoes 1/2 cup water 1/2 tsp salt 1/4 tsp red pepper 1/4 tsp thyme 1/4 tsp basil 1/4 tsp oregano 1 tsp Accent 1 tbsp Worchestire sauce 3 cups cooked shrimp, quartered 3 cups cooked rice 1 cup grated cheese paprika to taste 1 cup ripe olives, sliced

Directions:Make roux of fat and flour, add onions and brown. Add sausage and green pepper. Cook and stir for 5 minutes. Add garlic, parsley, tomatoes, olives, water, salt, red pepper, thyme, basil, oregano, Accent, and worchestershire sauce. Boil 5 minutes. Add rice and cook and stir 10 minutes on low fire. Stir in shrimp and pour in buttered casserole. Sprinkle top with cheese and paprika. Bake in 350º oven for 15 minutes. Garnish with parsley, if desired. |

Notes: My Grandmother's go-to holiday meal for large gatherings, the family story is she got the recipe from a contest winner sponsored by Accent. The further backstory is the recipe was created on the spot by a high school home-ec student, without testing, for the contest which required a large number of spices (and Accent). And it won! Regardless, it is our family classic now, our first recipe submitted to our cookbook. Recipe was copied directly from a notecard in Grandmama's hand. Spellings are hers, but I clarified a couple of abbreviations. Miss you, Grandmama.
