2 c. flour
1 c. quick-cooking oats
1 tsp. baking soda
1 tsp. cinnamon
1⁄2 tsp. salt
1 c. butter, softened
1 c. brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1 c. pumpkin
1 c. chocolate chips, I use milk chocolate
1 c. cinnamon baking chips (optional)
Directions:
Directions:
Cream butter with both sugars until light and fluffy. Add in egg, pumpkin, and vanilla and mix. Add flour oats, baking soda, cinnamon, and salt and mix well. Stir in chocolate chips and cinnamon chips. Bake at 350º for 18-20 minutes or until firm and lightly brown.
