Cookie Dough


Ingredients:

1 cup (2 sticks) butter, room temperature
1½ cups brown sugar
1 teaspoon vanilla
2 large eggs, room temperature
2¼ cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips

Directions:

Preheat oven to 350º

Add butter, brown sugar and vanilla to large bowl. Cream with an electric mixer until they are lighter and fluffier. Add in eggs, mixing well.

Add the flour, baking soda and salt and mix on low until well combined. Add chocolate chips and mix well with mixer.

Press half of the cookie dough in a 9x13 pan. Try to get an even layer. Set remaining cookie dough aside.

Bake for 10 minutes. While baking, prepare caramel sauce.
 

Caramel Sauce


Ingredients:

5 ounces evaporated milk
11 ounces caramel bits, or wrapped caramels

Directions:

In a saucepan over medium heat, combine milk and caramels. Stir until caramels are melted and sauce is smooth. (About 8 minutes)

Carefully remove cookie bars from oven and place on heat-safe surface. Pour caramel sauce over cookie bars, making sure to get sauce into every nook and cranny.

Carefully start placing flattened dollops of cookie dough on top of caramel sauce. (I find it works best to pick up a small handful of dough, flatten it in your hand a bit, and place directly on caramel sauce. Repeat with remaining dough.

Bake for an additional 15-18 minutes, or until the caramel is bubbly and the cookie is golden brown.

Allow bars to cool to room temperature before cutting. Serve with ice cream, if desired.
