1½ cups packed brown sugar
¼ teaspoon salt
½ teaspoon soda dissolved in 1 tablespoons hot water
2 cups flour
1 tablespoon whole anise seed
1 cup granulated sugar

Directions:
Directions:
In large bowl beat eggs at medium speed of electric mixer until very light. Gradually beat in brown sugar (any soft lumps will blend in); continue beating 15 minutes. (Mixture should be very thick.) Stir in salt and dissolved soda. Fold in flour and anise seed until
well blended. Put granulated sugar in pie plate. With lightly greased or oiled hands (dough will be sticky; do not add flour) form dough in balls the size of hickory nuts (slightly less than 3/4 inch diameter). Roll in sugar to coat. Arrange 1 1/2 inches apart on greased cookie sheets. Bake in preheated 375 degree oven 8-10 minutes or until light brown. Cookies will puff up during baking, then flatten and crackle on top when done. They are soft when taken from oven, but quickly become firm. (NOTE Cookies become crisp when stored; flavor improves with age.
