Ingredients:  
6 cups of zucchini or summer squash, sliced (I use 3 cups of each)
1/4 cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1/4 - 1/2 package of velveeta cheese, cubed
shredded chicken (I shred up a rotisserie chicken)

1 8 oz. pkg herb-seasoned stuffing mix
1/2 cup melted margarine

Directions:
Directions:
Boil zucchini/squash and onion for 5 minutes and drain.
Combine soup and sour cream.
Stir in zucchini, onions, and carrots.
Add in the velveeta cheese and stir until melted somewhat.
Add chicken.
In separate bowl, combine stuffing and margarine. Spread 1/2 of stuffing in bottom of a 9x13 glass dish.
Spoon veggies on top. Sprinkle with remaining stuffing.
Bake at 350 degrees for 30 minutes.
