1/2 C. Chopped Onion
1/2 C. Shredded Carrots
1 T. Unsalted Butter
2 C. Sliced Potatoes (Russet or Blonde)
1 1/2 Unsalted or Low Sodium Chicken Broth
1 C. Milk
2 T. Flour
1 (12 oz) Pkg Fully Cooked Bratwurst or Kielbasa , sliced
1/2 C. Frozen Peas
Dash of Hot Sauce

Directions:
In a 3qt saucepan, melt butter, add onion & carrots & cook over medium heat until tender. Add potatoes & broth. Bring to a boil. Cover, reduce heat & simmer for 30 minutes or until tender. With a fork or potato masher, slightly mash potatoes.

In a small mixing bowl, add flour & gradually stir in milk. Gradually, pour flour & milk mixture into potato mixture. Add brats, peas & hot sauce. Cook & Stir until hot & bubbly. Continue to cook 1-2 minutes more. Serve while Hot.
