1 lb. ground beef
1 onion (diced)
¾ c. shredded carrots
¾ c. chopped celery
1 t. dried parsley
3 c. chicken broth
4 c. cubed potatoes
¼ c. all-purpose flour
2 c. cheddar cheese (cubed)
1½ c. milk
4 T. butter

Directions:
Directions:
In a large pot, brown ground beef & onion. Add broth, celery, carrots, parsley & potatoes. Bring to a boil & then simmer until potatoes are tender - about 10 to 12 minutes.

In a saucepan, melt the butter & stir in flour. Add the milk, stirring until smooth. Gradually add the milk mixture to the soup, stirring constantly. Bring to a boil & reduce heat to simmer. Stir in cheese & continue to stir until cheese is melted. Do not boil.
