16oz Sharp White Cheddar, grated fresh
3/4 cup Mayonnaise
1/3 cup Pimentos, drained diced small
2 tbsp Pickled Jalapeños, drained and diced small
1/2 tsp Hot Sauce (Tabasco, Tapatío, Cholula)
1/4 tsp Red Wine Vinegar
1/4 tsp salt, plus more if needed
Sprinkle of paprika to taste
Cracked black pepper to taste

Grate 16 ounces of sharp white cheddar into a large bowl
Add mayonnaise, red wine vinegar, and hot sauce to the bowl and mix
Dice pimentos small, add to the bowl and mix
Dice jalapeños small, add to the bowl and mix
Add salt, paprika, and pepper to taste

The cheese is the single most important ingredient. It is up to you how sharp, mild, or nutty you want the cheese to be. The cheese that you buy will have a huge impact on the final flavor. I use a mix of sharp and extra-sharp cheddar.

Use basic mayonnaise. The fancy stuff could throw off the flavor.
