3 cups sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup soft butter or margarine
1½ cups sugar
2 eggs
1 teaspoon vanilla extract or 1 tablespoon grated lemon peel

Directions:
Directions:
1. Sift flour with baking powder and salt; set
aside.

2. In large bowl, with wooden spoon, or port-
able electric mixer at medium speed, beat
butter, sugar, eggs, and vanilla until light and
fluffy.

3. Gradually stir in the flour mixture until
smooth and well combined.

4. Using rubber scraper, form dough into a
ball. Wrap in waxed paper or foil; refrigerate
several hours, or overnight.

5. Divide dough into 4 parts; refrigerate until
ready to roll out.

6. Preheat oven to 400F. On lightly floured
surface, roll dough, one part at a time, about
⅛ inch thick.j

7. With floured, 2½-inch round or scalloped
cookie cutter, cut out cookies. Using spatula,
place 2 inches apart, on ungreased cookie
sheets. Reroll trimmings, and cut out.

8. Bake 6 to 8 minutes, or until cookies are
set and light-brown around edges. Remove to
wire racks; cool.
