12 oz. Tuna or Salmon
1/2 c. thinly sliced scallions (or finely chopped red onion)
1/2 c. plain bread crumbs
1/3 c. chopped fresh parsley
1/4 c. light mayonaise
1/4 c. dijon mustard
2 Large eggs
2 T. Fresh Lemon Juice

Lemon Herb sauce:
1/4 c. mayonaise
1/4 c. light sour cream
2 T. lemon juice
2 t. parsley

Directions:
Directions:
In bowl, combine scallions, bread crumbs, and parsley. Add
mayonaise, mustard, eggs, lemon juice, and salmon (or tuna).
Season with Salt and pepper. (for additional flavor add 3 T.
horseradish). mix gently.

Form into 8 patties (about 3" wide). Place on foil lined baking
sheet. Refrigerate for 20 minutes.

Heat broiler and broil until lightly golden brown, about 6-8
minutes.

Serve with Lemon-Herb sauce.
