1 C unsalted butter (room temp)
1 C white sugar
1 C lt brown sugar
1 C vegetable oil
1 egg
1 tsp baking soda
1 tsp vanilla extract
½ tsp salt
1 C one minute oats
3½ C a/p flour
½ C sweet shredded coconut
1 C corn flakes (lightly crushed)
½ C walnuts (chopped)

In mixing bowl (such as a stand mixer), blend butter, white and brown sugars until creamy. Add vegetable oil and blend until mixed. Clean sides of bowl with spatula and mix again. Add egg and extract, blend until mixed.

In a food processor, light grind the oats (not too much, we don’t want power, just reduce the size of the oat). In a medium size mixing bowl, add flour, oats, salt, and baking soda; then whisk until blended.

Slowly add dry mixture to the wet mixture until all dry ingredients are incorporated into the wet mixture. Only mix to the point where there is no dry ingredients remaining. Remove bowl from blender.

With a wooden spoon or sturdy spatula, stir in coconut flakes, walnuts, and lightly crushed cornflakes until thoroughly incorporated. Chill for 1 hour; but no longer than 3 hours.

Preheat oven to 350’. Using a 1½ oz scoop, scoop the dough onto prepared cookie sheet (parchment paper. Cook 9-11 minutes.
