1 1/4 sifted all purpose flour
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 cup shortening
1/2 cup sugar
1/2 cup molasses
2 large eggs, lightly beaten
1 12 oz pkg semisweet chocolate chips
1 1/2 cups old-fashioned oats
1 cup chopped walnuts
1 cup raisins

Pre heat oven 350 degrees. Line a cookie sheet with parchment paper or a nonstick baking mat. Sift together flour, cinnamon, baking soda, baking powder, salt and ginger in a medium bowl.

In a standing mixer cream shortening and sugar until light and fluffy, about 2 mins. Add molasses and beat until combined. Add eggs one at a time until fully incorporated. Add flour mixture one cup at a time until dough comes together. Remove bowl from mixer, and in chocolate chips, nuts and raisins until combined

Use an ice cream scoop and place on cookie sheet about 3 inches apart. Bake until firm 15 to 18 minutes. Transfer to a cooling rack for about 5 mins. Store in airtight container.

I've changed out the chocolate, raisins and walnuts for other dried fruits and nuts, such as dried cranberries, apricots, dried cherries, pecans Whatever your favorites are.
