2 c. Self Rising Flour
2 sticks Butter
½ c. Confectioner's Sugar
2 c. Sugar
4 Eggs
½ c. Lemon Juice
¼ c. Self Rising Flour
1 tsp. Lemon Rind
Powdered XXX Sugar

Directions:
Directions:
Pastry Level:

Add first 3 ingredients to food processor. Mix/Pulse until mixture is like pie dough.
Place pie dough mixture into an 8 x 8 pan and press it into a smooth layer.
Bake in 350º oven for 15 minutes.

Filling:

Mix well sugar, eggs, lemon juice, flour, lemon rind. Pour on top of the cooled pie crust.
Bake in 350º oven for 25 minutes.

Cool and top off with powdered xxx sugar.
