1 lb. Top or Bottom Round sliced thin
1 small Red Onion
1 lb. Mushrooms
1 ea. Green Pepper
1 small hot pepper (optional)
Salt
Pepper
Butcher String
Olive Oil
Butter
Flour
Beef Stock
1 c. wine (optional)

Directions:
Directions:
Pound out meat and lightly salt and pepper.

Prepare the filling by dicing the onion, mushrooms, green pepper, and hot pepper.
Mix and put on the meat slices.

Roll the meat slices and tie with butcher string. Brown the meat rolls in a frying pan with a little olive oil.

For the sauce, make a roux with butter, flour, salt, and pepper, add beef stock, but not too thick of a sauce. Add 1 cup of wine if desired.

Add meat to the gravy mix and braise.

In oven at 325º for 1 hour or stovetop on medium-low for 1 hour.
