Onion, diced
2½ lbs country style pork ribs or chops
Black eyed peas
Celery, 3 stalks
Carrots
Garlic
¼ cup soy sauce
Bay leaf
Ginger

Directions:
Directions:
If using dry peas - in sauce pan cover with water up to your second knuckle, bring to a boil then remove from heat, cover and let sit for 1 hour (at least)

Sauté diced pork with garlic (keep some in the pan)

Add onion and celery and soy sauce to brown

Add diced carrots and ginger

Sauté til fragrant

Fill with about 3 inches of water

Simmer 1 hour with bay leaves

Add peas and serve with rice
