5 lb's russet potatoes
salt and pepper (Ma used garlic salt)
red wine vinegar
Mayonnaise

Directions:
Directions:
Boil your potatoes until they are fork tender.
Chill them before peeling or cutting up. It's best to chill them overnight.
Peel off the skin and dice into bite sized pieces and place in a large bowl
Season with salt and pepper and vinegar. these are all to taste. Ma liked her salad a bit tangy from the vinegar. it will mellow as it sits.
Spoon in mayonnaise and gently fold into the potatoes.
Cover and place back in the refrigerator to chill.
Stir and taste for seasoning right before serving. Add seasoning or mayonnaise as needed.
