2 sticks butter
1/2 cup shortening
2 3/4 cups sugar
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon flavoring
3 cups plain flour
1 cup milk
5 eggs
1/2 tsp. baking powder
1 fresh coconut, grated
1 small container whipped topping

Frosting
5 tbsp. flour
1/4 tsp. salt
1 cup milk
1 cup butter
1 cup sugar
2 tsp. vanilla
Coconut, grated

Directions:
Directions:
Sift flour, salt and baking powder. Stir butter shortening to soften. Gradually add sugar; cream until light and fluffy. Add flavorings. Add eggs, one at a time, beating after each addition. Add sifted dry ingredients, alternating with milk, starting and ending with flour mixture. Beat slowly, just until smooth, after each addition. Pour into 3 9-inch pans and bake at 325° for 35 minutes or until done. Cool in pan for 10 minutes, then turn out onto rack. When cool, fill in between layers with whipped topping and a layer of fresh, ground coconut. Frost cake.

Make frosting. Blend flour, salt & milk; simmer until thick, stirring constantly. Let cool. Cream butter, sugar and vanilla; mix well with the cooled mixture. Sprinkle coconut all over frosted cake.
