*FOR KODIAK CAKES HIGH PROTEIN PANCAKES * (can sub regular pancakes, or cubed bread)
1 1/2 cup Kodiak Cakes high protein pancake mix
1 1/4 c milk
1 to 2 eggs
* FOR FRENCH TOAST *
4 c berries of choice (frozen triple berry blueberry-raspberry-blackberry is excellent)
2 Tbsp cornstarch, or 1 Tbsp Red Mill tapioca flour (can be found in gluten free or natural section of supermarket).
Optional: 1/2 c sugar
5 eggs
1/2 c milk
1 Tbsp brown sugar (Optional: 1/4 c real maple syrup)
1 tsp cinnamon
Optional: real maple syrup for serving

Directions:
Preheat oven to 350º. Place berries in the bottom of 8x8 inch baking pan or 2-quart casserole dish. Stir in sugar (if using) and cornstarch or tapioca flour. Place pan in oven as it is heating while you make the pancakes (important if you are using frozen berries but always a good idea).
Bake Kodiak Cake high protein pancakes according to box directions, using1 1/2 cup mix, 1 1/4 cup milk, and 1 or 2 eggs. (this is slightly less liquid than package directions to make thicker pancakes).
Alternate: Use bread slices (about 6?), or make your own pancakes from scratch (add protein powder if desired to the pancake batter).
Cut pancakes or bread into cubes.
In a mixing bowl whisk 5 eggs, 1/2 cup milk, cinnamon, and brown sugar (or 1/4 c maple syrup if using). Toss cubed pancakes in egg mixture.
Remove berries from oven and stir. Spoon pancake/egg mixture over berries. Bake for 40 to 45 minutes (until egg mixture is fully cooked in the middle and berries are bubbly).
Can be made ahead, cover pan and refrigerate. Scoop a serving into a bowl and reheat in microwave. Serve with maple syrup to pour over if desired.

This is a great make-ahead dish for breakfast before early morning hikes. Great protein/carb loading.
This can be made with fresh bread cubes instead of the pancakes. You could also make your own pancakes and add protein powder to the mix.
I make these to eat before all-day high exertion activities like hiking. I recommend adding the optional sugar/syrup as indicated if you plan to eat as-is. Or you can make the original recipe and pour syrup over the top as with regular french toast. Or both!
To make for healthy breakfast when you aren't heading to the top of a mountain, it is delicious without the additions.
