Grandma's Baked Potato Soup Recipe

4 large baking potatoes

2/3 cup butter

2/3 cup all purpose flour

6 cups of milk

1/2 teaspoon of salt (you will need more when it's done)

1/2 teaspoon white pepper (I use black pepper when I don't have white pepper)

4 green onions chopped and divided

12 slices of bacon, cooked crumbled and divided

1 1/4 cup shredded cheddar cheese divided

8 oz of sour cream

It makes it easier if you have everything measured out and set aside



Preheat oven to 400 degrees

Wash potatoes

Prick potatoes several times with a fork

Bake in the oven or in the microwave which is much faster

Cut cooked potatoes lengthwise

Scoop out potato and set aside

Melt butter in a heavy saucepan on low heat

Add flour stirring until smooth

Cook 1 minute stirring constantly

Gradually add milk

Cook over medium heat until mixture is thick and bubbles

Add potato, salt, pepper, 2 tablespoons of the green onions (I use more green onions because I like them), 1/2 cup of bacon pieces, and 1 cup of cheddar cheese

Cook until thoroughly heated and stir in sour cream



Top each bowl of soup with left over bacon, green onions and cheese
