Directions:
Bake at 410 degrees

Cut chicken breast into chucks about 2 inches square.

Roll the chunks in Ritz crackers that have been crushed. (I add some garlic salt to the crumbs)

Melt butter or margarine in a pan – (a little less than ¼ inch when melted), place the breaded chicken in the pan and roll it around in the melted butter.

Bake at 410 degree oven, after about 10 minutes you can flip them over in the butter until a meat thermometer reads 160 degrees or above on all the pieces. (It takes about 15 min or less to cook).

Add parmesan cheese to the chicken about 5 minutes before you remove it from the oven.

Serve surrounded by caramelized onions and mushrooms.
