1 lb. salted butter
1 lb. brown sugar
1 lb. milk chocolate
2 cups slivered (not sliced) almonds

I make this recipe in steps:
First, I chill the milk chocolate chips in the freezer for an hour or so (this helps them not melt while chopping) then run them through a blender/food processor until well chopped. Divide in half and set aside.
Then run the almonds through the blender/food processor until finely chopped. Divide and set aside.
Get jellyroll pan or large cookie sheet, sprinkle half the almonds covering bottom of pan then sprinkle half the chocolate covering all the almonds. Set aside

In a heavy duty 3 qt. pan melt butter and brown sugar on low, once melted turn up heat to med/high (not high) bring to a rolling boil stir constantly with wood spoon or (heat resistant) spatula. cook mixture to 248º or hard crack stage. This is very important, or your almond Roca will be chewy not crunchy.

Once it's cooked to hard crack stage pour over the almond and chocolate mixture. spread with rubber spatula so it completely covers the chopped chocolate. Then sprinkle the other half of chocolate covering hot mix, and lastly sprinkle the other half of chopped almonds on top of chocolate.
Basically, it's done in layers... First, layer almonds then chocolate, then cooked roca mix, then chocolate, then almonds.
Let cool until all is hard and break up in the pan.
Store in container @ room temp or fridge... ENJOY!!!

This prized recipe was given to me from Grandma Edna DeYoung in 1984. She made this every Christmas, and it was always a family favorite.
It is her tradition I have carried on for my family all these years and hope you will too.
