Tuna in brine, drained
Eggs- hardboiled (1 per 5 oz. can)
Onion-finely chopped (I use red)
Sweet pickles-diced (1 per 5 oz. can)
Sweet pickle juice- approximately 1 tsp.
Capers (optional) ½ to 1 tsp.
Mayo or Miracle Whip

Mix tuna with chopped egg in a bowl. Add onion, pickles and capers. Add pickle juice, mayo or Miracle Whip until preferred taste and consistency. Refrigerate until ready to use.

This recipe may not be all that special but the memories that come with it are very special-Christmas Eve after the Children's program at St. Matthews. We would go to Grandma Rose Rathert's house with my aunts, uncles, and cousins. Before opening presents we would make sandwiches from a selection of meats, cheese, bread and my favorite tuna fish. My sister remembers us kids getting a whole can of pop each as her special memory.

This has become a regular Hope family favorite also. I generally double or triple the quantity and never stick to the recipe as written.
