6-8 Large eggs, hard-boiled
Can of sliced beets
1 tsp sugar
some vinegar to taste
bit of salt

Put ingredients except eggs in a pan and bring to a boil, then once cooled, place hard-boiled eggs in a jar and pour beet mixture over eggs. Add some water if not enough juice to cover eggs. Leave in jar at least overnight. Serve whole or sliced.

Pickling eggs and using beets as a flavoring was a Pennsylvania Dutch dish and once made, the pickling serves to preserve the eggs so they would last longer. However, we recommend they be kept in the refrigerator.

Gram would make these often but especially during Easter. Love them.

A final note: Tasting to ensure your dish has the right balance of tang (the vinegar) and sweetness(the sugar) is especially important when making this recipe. But once you get the hang of it, you will love the results. Pickled Eggs can be served as an appetizer but more typically as a side for a holiday meal. The red color of the beets also makes this a perfect side for Christmas dinner.
