2c sugar
1 stick butter
1/4tsp salt
1/2c milk
1/4c cocoa (try dark cocoa for a special treat)
1/2c peanut butter (smooth or chunky works)
3 1/2c quick rolled oats
1tsp vanilla

Directions:
Directions:
Measure sugar, butter, salt, milk and cocoa in large saucepan. Stir till sugar is dissolved over medium heat.

Bring to a rolling boil stirring occasionally

Remove from heat, stir in peanut butter, oats and vanilla. Mix well

Using a small cookie scoop, drop on waxed paper and let cool completely

Yield 3 dozen

Personal Notes:
The name Busy Day comes from not needing to bake these treats so they are quick to make on a "busy day". These make their appearance each year around the holidays and one could argue they are more candy than cookie, but either way we all love them. These store great in the freezer as well.

Note of warning: do not attempt to make this recipe when humidity is high or they won't set up.
