Grandma Miller's Spritz Cookies Recipe

2 sticks unsalted butter
1c sugar
1 1/2tsp vanilla
2 eggs
3c sifted four
1/4tsp salt

Preheat oven to 400º

Cream butter sugar and vanilla for 3 minutes till light and fluffy, scraping bowl halfway through

Add dry ingredients and mix well.

Put through cookie press on ungreased cookie cookie sheets and bake at 400º for 10 min or until done.

Yields 7 dozen

VARIATIONS:
Substitute Almond or Lemon for the Vanilla

Divide into portions and add food coloring

Spicy spritz - omit vanilla and add 1/4tsp ground ginger, 1/2tsp nutmeg, 1/2tsp cinnamon and 1/4tsp cloves

Peanut butter delights - reduce butter to 2/3c and add 1/3c peanut butter

Cocoa crisps - Add 6tbsp cocoa and 1tbsp milk

Mother's cookies - use powdered sugar instead of granulated and add 1c finely chopped nuts and 1tsp baking powder

Orange tea cookies - add 1tsp grated orange rind and 1tsp orange flavoring instead of vanilla
