3 eggs
2c sugar
1c vegetable oil
3tsp vanilla
3c sifted flour
1tsp baking soda
1/4tsp baking powder
1tsp salt
3tsp cinnamon
2c raw zucchini grated
1c chopped nuts (optional)

Directions:
Directions:
Preheat oven to 350º

Beat eggs and sugar, add oil and vanilla and mix well

Sift dry ingredients and add to wet ingredients and mix well

Add grated zucchini and nuts, mix and pour into loaf pans

Bake for 1 hour

Makes 2 large or 4 small loaves

This was Grandma Miller's go to quick bread which she made and wrapped in foil and then a festive towel to give to friends and neighbors every Christmas.
