1 3/4 c. flour
1 1/2 c. sugar
1 t. baking soda
1/2 t.salt
2 eggs
1 c. mashed banana's ( 2-3 medium)
1/2 c. vegetable oil
1/4 c. plus 1 T. buttermilk
1 t. vanilla
1 c. chopped walnuts - optional

Directions:
Directions:
Stir flour, sugar, baking soda & salt together. In a separate bowl combine eggs, banana, oil, buttermilk & vanilla. Add to flour mixture, stirring just until moistened. Pour into a greased 9 x 5 loaf pan. Bake at 325 for 1 hour 20 minutes or until bread tests done. Cool for 10 minutes before removing from pan. Cool on a wire rack.
