Salad:
Lettuce mix
1-2 pomegranates, seeded
goat cheese log (use as much as you like)
1-2 cups pecans
1/2 cup - 1 cup dates, sliced in half or quarters

Dressing:
2 cloves garlic minced
2 tsp dijon mustard
2 tsp grainy country style mustard
1/2 tsp salt
1/2 tsp pepper
1/3 cup maple syrup
1/3 cup apple cider vinegar
2/3 cup olive oil

Directions:
Directions:
Put pecans and dates on baking sheet. Toast in oven at 350 for 8 minutes, until fragrant. Make dressing. Toss everything together.
