1 cup shortening or butter
1 cup sugar
1 egg
1 cup molasses
2 tbsp vinegar
5 cups sifted flour
1 1/2 tspn baking soda
1/2 tspn salt
3 tspn ground ginger
1 tspn cinnamon
1 tspn cloves

Royal Icing:
3 egg whites
1 lb. confectioners’ sugar (450g)
1 tspn vanilla extract

Directions:
Directions:
Cream shortening and sugar. Beat in egg, molasses and vinegar. Sift together dry ingredients; blend in. Preheat oven to 375º. Roll dough on lightly floured surface. Cut into house shapes. Place 1" apart on greased cookie sheet. Bake for 5-6 minutes. Cool. Decorate with royal icing and candies.

For royal icing: In the bowl of a stand mixer or large mixing bowl, beat egg whites on medium-low speed until frothy, about 1 minute. With the mixer on low speed, slowly add in confectioners’ sugar and vanilla. Once fully incorporated, increase speed to medium-high and beat until stiff peaks shiny peaks form. Separate into batches and add food dye to make different colored icing. Transfer to piping bag for easy use; use swiftly, as this icing dries out and hardens fast!
