2 tablespoons oil
1 pound beef sirloin steak
1 envelope onion soup mix
2 cups water
2 teaspoons soy sauce
1 green bell pepper, sliced
1/2 teaspoon ginger
1/8 teaspoon garlic, minced
1 tomato, cut up
1 tablespoon cornstarch

In skillet, heat oil and brown beef; drain. Add soup mix blended with 1-1/2 cups water. Bring to a boil, then simmer covered for 20 minutes. Stir in green pepper, soy sauce, ginger, and garlic. Simmer covered 15 minutes or until beef is tender. Stir in tomato and cornstarch blended with remaining water. Bring to a boil, then simmer, stirring constantly until sauce is thickened. Arrange beef mixture over hot rice.
