Pie Crust

2 cups All purpose Flour
1 cup Cold Crisco Shortening
Dash of salt
1 T white vinegar
a little extra cold water if needed.

Directions:

Pour all into a bowl. Mix up quickly do not over mix.
Chill for 10 minutes before rolling out.
Split dough in two balls. (return one to refrigerator while working with other)
Roll out bottom crust for Tortiere. (1/16"inch thick) put in 9 inch pie pan and put back in Refrigerator, remove second ball, roll out top crust and return to refrigerator to chill until needed.
 

Meat Filling

2 lbs Ground Meat (beef and/or Pork or a mix)
1 Onion (diced)
a Pinch of Nutmeg
Salt and Pepper to taste.

Preheat oven to 400ºF
In large skillet or sauté pan. Add meat, onions, and spices. Cook until about 1/2 cooked (just browned). Drain off excess Fat.
Fill Pie shell, dust meat with 1-2 tsp flour.
Cover with top crust, Crimp edges of pie crust together.
Brush top with egg wash or milk.
Bake for 40-45 minutes

Claudia Dusheneau Gagne is my maternal grandmother She was married to Maurice Gagne, She move to the US from Canada and became a US citizen. My mother Gertrude is her middle daughter, She had 5 kids, "Gay, Leo, Gertrude, Beatrice and Roland. Grandma had 22 grandchildren and a whole bunch of great grands. She was a beautiful, elegant woman, who I miss very much. (my little sister is her namesake.)
