1 large can pumpkin
2 cups sugar
1 cup oil
5 cups flour
5 tspn baking soda
1 tspn salt
4 tspn cinnamon
2 tspn vanilla
1 cup nuts; 3/4 cup raisins (optional)

Directions:
Directions:
Preheat oven to 350F. Generously grease 5 or 6 small (6″x3″) loaf pans or 3 large (9″x6″) loaf pans. In a large bowl, mix well pumpkin, sugar and oil. Add in and mix together all other ingredients together until combined into a smooth batter.

Pour batter into greased pans. Bake smaller loaves for 40-50 minutes and larger loaves for about 70-80 minutes or until toothpick inserted comes out clean. Allow the loaves to cool on a wire rack before removing from the pans and storing or freezing.
