3 cups of sugar
¾ cup light corn syrup
¾ cup hot water
¼ teaspoon salt
3 egg whites (room temperature)
1 tsp. vanilla
Optional: nuts, food coloring

Directions:
Directions:
Combine sugar, corn syrup, hot water and salt in heavy saucepan. Cook over low heat, stirring constantly, until sugar dissolves and syrup is clear. Continue cooking on medium heat, without stirring, until it reaches soft ball stage (240º). While syrup cooks, beat egg whites in large bowl on high speed until stiff peaks are formed. In a fine stream, slowly pour ⅓ of hot syrup over beaten egg whites, beating constantly at high speed (about 5 minutes) until stiff peaks are formed when
raising beaters. Cook remaining syrup over medium heat until 265º or a very hard ball stage. In a fine stream slowly pour hot syrup into meringue mixture, beating constantly. Don't scrape pan. Continue to beat until mixture holds its shape when it s dropped from teaspoon onto waxed paper. If candy holds its shape, it's done. Blend in vanilla. Get a teaspoon of mixture and push off with another teaspoon onto waxed paper until all mixture is used. If desired, add nuts and/or flavoring or food coloring. NOTE: If mixture becomes too stiff, add a few drops of hot water.
