¾ cup butter unsalted and softened (not melted)
¾ cup sugar
1 egg
1½ teaspoons pure vanilla extract
1½ teaspoons peppermint extract
⅛ teaspoon salt
¼ cup unsweetened cocoa powder 100% cacao
1½ cups flour
1 bag of melting chocolates

Preheat oven to 375º. In large bowl mix butter & sugar with electric whisk or beaters until well combined. Drop in egg, vanilla, peppermint, & salt and continue mixing. Reduce speed to low & add cocoa powder & flour until well blended. Scrape sides of bowl as needed. Pack dough in cookie press & fit with desired design plate. Press dough onto ungreased cookie sheets (if dough is too cold it won't "release" from press onto cookie sheet easily). Continue pressing out cookies using your preferred design plates (that's the fun part!) & spacing cookies about 1" apart. Bake until firm to the touch, about 10 minutes (or less). Cool on drying racks. Once cooled, heat your melting chocolate preferably in double boiler. To dip, place cookie flat on fork so when dipping cookies in chocolate, excess will drip through prongs in fork. Set on wax paper to dry. If chocolate needs to be more runny, add coconut oil. Once a batch is done, add sprinkles before chocolate dries. I prefer a strong peppermint flavor and add a drop of peppermint to melting chocolate. These are my go-to cookies for cookie exchanges or school/holiday functions. It has more steps but looks great & different from typical holiday cookies - they're little, so 1 batch makes a lot (about 48 servings)! Adapted from https://www.100daysofrealfood.com/.
