1 cake yeast (2 goes faster)
½ cup lukewarm water
2 tsp. sugar
Dissolve sugar in water. Add yeast and let stand 10 minutes.

1½ cup milk
½ cup shortening
2 eggs beaten
6 cups sifted flour
½ cup sugar
1 Tbsp. salt

Directions:
Scald the milk, add shortening, sugar and salt. Cool to 75 º. Add enough flour to make a thick batter. Thoroughly stir mixture and add to batter with beaten eggs. Add enough flour to make a soft dough. Turn out on floured board, cover with bowl and let stand 10 minutes. Knead until smooth and velvety. When punched down with a finger the mixture should rebound. Cover again with a bowl and let rise at 80 º until double in bulk. Punch down, cover and let rest 20 minutes then shape into desired rolls. Small single rolls set well apart, bake 12 to 15 minutes at 400-425 º.

Cinnamon and sweet rolls set close and bake 20 to 30 minutes at 350 to 375 º.
