3 pounds fresh ricotta cheese
8 large eggs
½ pound of sugar
2 oranges, zest only
butter for coating the bottom and side of pan
Directions:
Directions:
In a bowl mix together all of the ingredients very well.

Coat the bottom and sides of a 9" springform pan with butter.

Pour the mix into the springform pan.

Bake in 425º for 30 minutes, reduce heat to 380º and bake for an additional 40 minutes.

Cool and serve.
