1 C. Shortening
1 1/2 C. Brown Sugar
2 Eggs
3 C. Flour
1 tsp. Baking Soda
1/2 tsp. Salt
1 1/2 Diced fresh or frozen rhubarb
3/4 C. Flaked Coconut

Directions:
Directions:
In a bowl, cream shortening and brown sugar until light and fluffy. Beat in eggs. Combine the flour, baking soda and salt; gradually add the creamed mixture and mix well. Fold in the rhubarb and coconut.
Drop by rounded teaspoonfuls 2 inch apart onto greased baking sheet. Bake at 350º
for 10-14 mins. or until golden brown. Cool for 1 minute before removing to wire racks to cool completely.

Frosting:
1 pkg. (3 oz.) Cream Cheese, Softened
1 T. Butter, Softened
1 1/2 C. Powdered Sugar
3 tsp. Vanilla

In a bowl, beat cream cheese and butter until fluffy. Beat in the powdered sugar and vanilla. Spread on cooled cookies.
