1 large cup coarse corn meal
1 1/4 cup milk
2 eggs
1/2 cup cooking oil
1/2 cup sugar
1 1/2 cup flour
2 heaping tsp baking powder
1 tsp salt

Directions:
Directions:
Soak cornmeal in milk for a few minutes. Add 2 eggs unbeaten and remainder of ingredients.
Mix just until well blended.
Pour into greased 8x8 pan.
Move rack up 1 notch; bake at 350 for about 35-40 minutes or until a little brown and done in the center.
