¾ cup butter, melted
1 cup sugar (plus a little extra for rolling)
¼ cup unsulphured molasses
1 egg
2 cups flour
1 teaspoon baking soda
½ teaspoon ground cloves
¾ teaspoon ground ginger
¾ teaspoon cinnamon
½ teaspoon salt

Directions:

Combine cooled melted butter with sugar, molasses, and egg and mix well. Sift the remaining ingredients together and stir into the sugar mixture.

Cover the dough and refrigerate for several hours. When chilled, roll into 1-inch balls and roll each ball in granulated sugar. Place balls on a greased cookie sheet 2 inches apart. Bake at 375º for 8-10 minutes. (Do not over-bake!) Remove from pans immediately and cool on wire racks.

Grandma's Gingersnaps came from a cookbook I bought while living in Texas - "Cooking Texas Style" by Candy Wagner and Sandra Marquez. I had dreams of learning to make all kinds of Texas specialties. Turns out that Grandma's Gingersnaps was the only recipe I ever made from the book! They are perfection! (Karen's favorite!)
