Ingredients: 2 cups flour 2 to 3 eggs 1 tsp. salt
These amounts can be increased according to how much you want to yield.

Directions:Set aside 1 of the 2 cups of flour. Combine 1 cup flour, eggs, and salt. Slowly add the second cup of flour. Knead for about 15 minutes and roll into a ball. Consistency should be similar to biscuit dough. Flatten the dough onto flour-covered wax paper. Roll out the dough as thin as possible using flour on top and throughout the rolling process. Cut into small sections (not strips yet). Roll out again and slice into noodles. (According to my Grandma, the secret is to use plenty of flour - but in small increments at a time). Re-roll the scraps and cut more noodles until all of it has been used. Let the noodles dry for a few hours. They can be stored for about a week.
Cook the noodles in boiling water no more than 4 minutes.

Notes: When I was little, I remember my Grandma making these on the day after Thanksgiving to use in her turkey soup. Many years later, I asked her to show me how to make them. A good thing too, since most of what she made was never written down on a recipe card, it was just sort of "known-and-shown" through the generations. These noodles are pretty basic, but there is something special about the memory of being in my Grandma's kitchen and learning from her.
