Grandma Great's Fried Chicken Recipe

Ingredients: 1 whole chicken, cut up oil for frying 2 c. flour 1 t. salt 2 t. pepper

Directions: |
Directions:Heat oil in a skillet to 350º. Grandma used an electric skillet. You will want about an inch of oil. Rinse chicken piece and pat dry. Place flour, salt and pepper in a brown paper bag and shake. Add chicken and shake to cover each piece completely. Preheat oven to 275º. Once oil is at 350º fry the chicken in batches on each side until chicken is brown. Do not crowd the chicken. Once chicken is browned well on both sides, remove it from the skillet and place it in a 9 x 13 pan lined with a couple of layers of paper towel. Place it in the oven and continue to fry the remaining pieces of chicken. Once all pieces are finished frying, continue cooking in the oven until chicken is cooked throughout. The internal temperature should be 165º or until the juices run clear.
Once the chicken is in the oven, drain all but about 2 T. of the oil used to fry the chicken and add 2 T. flour to it. Stir until it is bubbling and add milk. Stir until thick and adjust seasonings as needed. Perfect chicken gravy! |

Notes: Grandma always was in charges of frying the chicken for the family get togethers. As kids, we would go to Grandma's on Sundays for dinner. Everyone in the Clawson and Snyder families always talked about Grandma's fried chicken.
