1 lb. light brown sugar
1/2 cup 4% milk (or higher)
pinch of salt
1 tsp. vanilla
1 tbsp butter
shallow cup of ice water
bowl of ice water

Directions:
Directions:
Measure the vanilla and the butter; set aside with the cup and bowl of ice water and a buttered pan. Mix brown sugar, milk (cream), and salt in a saucepan. Bring to a boil and boil for about 2 minutes. Begin testing by putting a drop of fudge in the cup of ice water. When in forms a ball that sticks to your finger, remove from heat and quickly add vanilla and butter. Stir until melted, stirring constantly. Once butter is melted, alternate dipping pan in and out of ice water at 10 second intervals, still stirring and testing constantly. When you can feel the tiniest of grains forming, pour immediately into buttered pan. Cut when halfway firm. Freezes well.

Grandma Brown (Pappy's mother) used to make this every Halloween. She would wrap a 3" square of fudge in aluminum foil and hand that out to trick-or-treaters with a single stick of Juicy Fruit gum. These instructions are written just as she explained while making it.
