1/4 lb. Candied Ginger
1/2 oz Root Ginger (1 Tablespoon)
5 lbs. Pears
5 lbs. Sugar
2 Lemons

Directions:
Dice the Candied Ginger. Peel and grate the Root Ginger (or substitute equal amount Ginger paste). Zest Lemons, then squeeze juice and set aside the zest and juice. Prepare the Pears: they can be peeled or left with peel on but remove cores and stems then dice them. In a heavy pot stir together Pears, Sugar and Gingers; boil gently for 1/2 hour stirring down foam. Add zest and juice and boil 1/2 hour more. Measure into prepared (washed and drained) jars/lids. Seal and process with canning instructions or refrigerate.

Judy shared this delicious Jam that her mother made. I had never made Pear/Ginger Jam before and we weren’t sure about how to add the Lemons, so I tested the recipe. It is just delicious. I left the pulp on because my Pears had a beautiful blush color. Next time I make it I will use the Lemon pulp to make it like a marmalade
