Heat oven to 325 degrees Bake 12-15 minutes

1&1/4 Cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 Cup brown sugar, packed
1 Stick butter, softened
1 Egg
1/2 teaspoon vanilla

1 Cup shredded coconut
1 Cup oatmeal

Directions:
Directions:
Whisk together flour, baking powder, baking soda and salt - set aside

Cream together the butter, brown sugar, egg and vanilla until light and fluffy

Slowly add flour mixture to above, then fold in coconut and oatmeal

Shape into a ball or use small cookie scoop and place on parchment line baking sheet about 2 inches apart

Bake until light golden brown

This is the only coconut cookie that dad likes. I like the brown sugar instead of white
and that they are a soft cookie

This is one that I got in North Dakota, and it is a favorite, at least to Dad
