2 pounds potatoes
3 Tbsp melted Butter
3/4 cup Potatoe Starch or Cracker Meal
1 large Egg or 2 Egg Yolks
1/4 tsp grated Nutmeg
Salt and Pepper

Directions:
Directions:
Peel, and chop potatoes. Place potatoes in a large pot. Add water and salt and cook potatoes until fork tender. Drain and place the potatoes back into the pot, stirring for a minute or two until excess moisture has evaporated. Mash or rice potatoes while still hot. Add all ingredients and stir until well combined. If the dough is too dry, add melted butter. It the dough is too wet, add cracker meal or potato starch.

Create dumplings using an ice cream scoop, and form round balls. Bring water to a boil, and then reduce the heat to medium-low. Add dumplings to very hot, but not boiling salted water. Don't overcrowd the pot. Cook them in batches for about 13 minutes. Dumplings will float to the surface when they are done. Remove from the water with a slotted spoon and serve with Sauerbraten.
