1 quart vinegar
1 TBL whole cloves
1 TBL whole allspice
1 TBL mace
1 quart sugar
cinnamon sticks (to taste)

Directions:
Directions:
Boil young carrots until skins sip and remove skins. Slice or leave whole (depending on size).
Make a simple syrup with the vinegar, cloves, allspice, mace and sugar. Bring ingredients to boil.
Pour syrup over carrots let stand over night.
Bring to a boil (the following day), remove the spice packet.
Pack carrots in clean jars. Fill with syrup to 1/2 inch from top.
Put on lids tight and put in a 10 minute water bath.

These were on Grandma's Mary's table often. I have fond memories of eating these pickled carrots.

I have never canned foods, so I am not sure these are good canning instructions. Proceed with caution. ;-)
