½ cup olive oil
1½ cups finely chopped spinach
½ cup finely chopped Italian parsley
½ cup fine bread crumbs
½ cup grated parmesan cheese
1 clove garlic minced
2 to 4 cups homemade pasta sauce
1 teaspoon oregano
1 teaspoon salt
½ teaspoon pepper
2 beaten eggs
1 pound jumbo stuffing shells

Directions:
Directions:
1. Mix olive oil with the spinach, parsley, crumbs, parmesan, garlic, eggs, oregano, salt and pepper.
2. Cook the shells al dente, about 6 minutes.
3. Mix the pasta and toppings together.
4. Place some sauce in the bottom of a 9x13 inch casserole.
5. Add half of the shell mixture, some more sauce, the rest of the pasta mixture and again more sauce.
Be sure to cover the shells thoroughly.
Bake at 350 degrees for 35 to 45 minutes.
