½ cup butter, softened
1 cup brown sugar, lightly packed
1 cup mashed ripe banana (about 2 average bananas)
1 egg
1 ½ cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon nutmeg
½ teaspoon salt
½ cup chopped walnuts (or pecans)
½ cup cinnamon chips *
½ cup coconut
½ cup dried blueberries
1 ½ cup quick rolled oats

Directions:

Heat oven to 375. Line two baking sheets with parchment paper and set aside.

In a large bowl, beat the butter and brown sugar well.

Add mashed banana and egg. Beat well.

Stir in flour, baking soda, nutmeg, and salt

Add walnuts, cinnamon chips, coconut, and blueberries. Stir just until blended.

Add oats and stir until incorporated. The dough will be very soft.

Scoop in rounded tablespoons about 1 inch apart on prepared baking sheets.

Bake 11-12 minutes. Move to cooling rack.
