Grandma Rose's Marinara Sauce Recipe

4-5 pork neck bones
2 garlic cloves
4 28 ounce cans tomato sauce
12 ounces tomato paste
1 ½ teaspoons Italian seasoning
1 teaspoon oregano
1 teaspoon salt
¼ teaspoon black pepper
1 onion (whole not chopped)
7 whole cloves
¼ cup white wine
Optional: Granulated sugar

1. Heat pan with oil and add chopped garlic. Cook until fragrant.
2. Add the seasoning. Then put in the pork neck bones and salt and pepper. Cook until pork has browned on both sides.
3. Add white wine and 1 28 ounce can of tomato sauce. Let simmer for 8-10 minutes.
4. While the sauce is simmering, add 3 28 oz cans of tomato sauce to a slow cooker. Add tomato paste 1 Tablespoon at a time and stir. You may not need all 12 oz of tomato paste. This adds a thicker texture to the sauce, so use until you see a consistency you like.
5. Add all contents of the pot to the slow cooker and check if sugar is needed. Sugar will cut the acidity in the sauce and add a bit of sweetness. You can add a whole 1 medium carrot to the pot in place of the sugar.
6. Take the onion and stick the cloves all around the outside of the onion. Put this in the slow cooker.
7. Turn the slow cooker on high for 4-5 hours. Check regularly for seasoning and adjust as needed.
8. Remove onion, pork neck bones, and possibly carrot from the pot and serve over your favorite pasta dish.
9. Any leftovers can be put in the freezer to enjoy later!

One of my favorite memories is eating the meat from the pork neckbones after my mom made sauce. Even though it doesn't make it to the final product and there isn't a ton of meat, it is delicious from sitting in the sauce and makes a yummy snack or addition to a pasta dish.
