Cookies:
1 cup shortening
½ cup sugar
½ cup brown sugar
2 Tbsp lemon juice
1 egg
2½ cup flour
1 tsp salt
¼ tsp baking soda
1 tsp lemon rind

Frosting:
butter
powdered sugar
milk lemon juice

Directions:
Directions:
1. Mix all ingredients together with an electric mixer.
2. Split into large balls of dough and put into a bowl to refrigerate. Overnight is best, but it will be fine if only for a few hours.
3. Roll out dough and use cookie cutters to cut the dough.
4. Bake at 350ºF for 10 minutes or until brown around the edges.

Frosting:
Mix ingredients together to taste until a thick icing is created.

My grandma has never been one to put lots of instructions on these cookies, so the directions are pretty basic, but each year my cousins and I get together with my grandma to make these cookies and decorate them.
